I created this crazy little dish today along with stuff peppers.
Step-by-step after the jump!
For this one we’ll need:
- Sweet Potato
- Cheese (I used smoked Guda)
First things first we wash and remove the stems from our mushrooms.
Next we cut our bacon down to size and make a little nest in a muffin tray where our mushrooms will rest top down (stem hole up).
The other mushrooms were too big to fit inside the last three holes…
Cube up some cheese
Set it down in the mushroom holes.
Grate (yes with a cheese grater) a sweet potato
Place it on top so our mushrooms look like a ginger.
There they are all ready for the oven!
Oh look they are done!
